Will every sheet in the workbook be included?
Yes. Each sheet is exported in tab order, one after another, so a multi-sheet Calc file becomes a single continuous PDF. Set a print range per sheet first if you want to limit what appears.
Can I make the header row repeat on each page?
Yes, if you set it in Calc. Use Format > Print Ranges > Edit to mark rows to repeat, and that header reprints at the top of every PDF page so a long table stays readable.
